When you think about dessert, you don't usually think about goats. There's one Limestone County operation that's combining the two to create a really tasty treat.

Paul Spell and his wife, Leslie, own and operate Humble Heart Farms. They milk about 45 goats daily, then use the milk to make all-natural products, like cheese.

"It's a lot different than the stuff you'd get at the store. Everything's fresh. It's really good," said Spell.

After the goats are milked, their milk is moved into a milk tank, where it's kept cold until it's ready to be used.

"A cow will give 14 gallons of milk a day. A good goat, you're looking at a gallon, gallon and a half tops a day," said Leslie Spell.

Then it's on to the cheese room. But cheese isn't all that's made there. The Spells also use goat milk to make frozen desserts, which are a lot like ice cream. They call them Udder Escapes.

"And then we also do a version of an Italian ice, which contains goat milk, so it's not a true Italian ice, but that's called a Bama Cool," she said.

So how can you get some? The Spells are bringing their products to the Rocket City for an annual environmental event called Green University.

And though their operation is small, the couple says their products are sure to bring a big smile to your face.
